To celebrate Ukrainian culture, we made one of the absolute hits in Ukrainian dessert menu – Honey Cake.
Honey sweetness is nicely balanced by soured cream used for icing and layers between the sponges. Mountain flowers honey from MISHKA range would be the best option for this cake.

Ah, but it seemed so simple back then, in the British summer of 2021. I would visit the lovely traditional beekeepers of Altai — a remote region of Siberia – and ask them to begin sending me small shipments of their exquisite, pure, single-source honeys.
